Chinese New Year Recipe: Walnut Cookie Ice Cream Sandwiches
While Chinese New Year celebrations unfold, here’s a perfect addition to complete your CNY dessert lineup. A simple dessert that’s easy to add your favourite Central Smith flavour between. This recipe can be enjoyed throughout the year but the walnut cookies are a traditional Chinese dessert, making it a great option for Chinese New Year celebration.

INGREDIENTS
- 2 cups flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- 8 tablespoons softened butter
- ½ cup sugar
- ¼ teaspoon salt
- 1 beaten egg
- ¾ cup finely chopped walnuts
- Central Smith Green Tea ice cream
PREPARATION
Cookies
- Mix together the flour, baking soda and baking powder.
- In a separate bowl, cream butter, sugar and salt.
- Add flour mixture to butter mixture and add walnuts.
- Beat the egg and separate 2 teaspoons aside. Add the rest to dough mixture.
- Divide and roll 12 cookies from the dough.
- Let rest for 15-20 minutes.
- Set oven to 350 degrees Fahrenheit.
- Brush beaten egg over cookies.
- Bake for 20 minutes.
- Let cool and set aside.
Sandwiches
Grab 2 cookies and place 1 scoop of Central Smith Green Tea ice cream on one cookie. Top with your other cookie and squish together as a sandwich. Enjoy immediately!
